Quinoa Chicken


I had just gotten home from Thanksgiving week and needed something healthy for dinner that I could make with my limited kitchen supplies. I’m not normally one for simply cooked chicken breasts, but this was delicious.

1 cup of quinoa cooked in chicken broth
2 boneless, skinless chicken breasts cooked in olive oil, basil, salt, and pepper

Mix it together once cooked with some Parmesan cheese and enjoy!
